Gut-loving Shakshuka

Nothing says fresh start like a nourishing, flavour-packed meal. This month, we’re bringing you a vibrant, gut-loving Shakshuka—packed with anti-inflammatory herbs, rich tomatoes, and protein to fuel your day. Perfect for a weekend brunch or a quick midweek reset, it’s the kind of meal that tastes as good as it makes you feel.

Ingredients (for 2)

  • 1 pepper
  • 1/2 red onion
  • 2 cloves garlic
  • 2 rashers of streaky bacon
  • Handful of spinach
  • Squeeze of tomato purée
  • 1 can chopped tomatoes
  • 4 eggs
  • 1 bunch of coriander
  • Feta for sprinkling
  • Toast for serving

Method

- Chop up the garlic, onion and bacon and sizzle in a frying pan with some olive oil until the garlic is golden and the bacon is a little cooked.

- Add the red pepper and tomato purée and then cook until softened (I also added a glug of red wine at this point).

- Pour in the chopped tomatoes and add half your coriander, along with the spinach.

- Once cooked, pop the eggs on the top, sprinkle on the feta, and put the lid on your pan.

- Cook until the eggs are your desired level of cooked. Then sprinkle on some coriander and serve up with some toast.

How does this help support your body?

SPINACH: rammed full of iron. This is vital for energy synthesis but particularly worth bearing in mind for women who are menstruating. During this time, the amount of iron in your body reduces, making it harder for your body to make the haemoglobin required to carry oxygen around (thus making you more tired).

EGGS: full of high density lipoprotein (“good cholesterol”), which absorbs low density lipoprotein (“bad cholesterol”) from the blood and takes it to the liver so it can be flushed out from the body (obvs lots more benefits but just 1 of my faves).

FRESH HERBS: the benefits differ from herb to herb, but generally they are rich in antioxidants and anti-inflammatory properties, which boost immunity and circulation for healthy metabolic function.
